Ingredients

  • 1 box Barilla Protein PLUS® Penne
  • 3 tablespoons extra virgin olive oil
  • 1 pound Brussels sprouts, sliced in quarters
  • ½ small butternut squash, diced small
  • 1 clove garlic
  • 1 bunch kale, sliced thin
  • To taste salt
  • To taste black pepper
  • ¼ cup Parmigiano-Reggiano cheese, grated

Barilla Protein PLUS Penne With Roasted Winter Vegetables And Shaved Parmigiano Cheese

Instructions

  1. Pre-heat oven to 425°F.
  2. Toss squash and Brussels sprouts with olive oil and roast separately, until slightly browned and cooked through.
  3. Bring a large pot of water to a boil and season with salt.
  4. Cook pasta according to package directions.
  5. In a large skillet, sauce chopped garlic in 1 tablespoon of olive oil until slightly yellow in color.
  6. Add kale and sauté for 3-4 minutes.
  7. Season with salt and pepper.
  8. Add a ladle of cooking liquid and bring to a simmer.
  9. Add roasted vegetables.
  10. Drain and add pasta to the sauce.
  11. TOSS with parsley and top with grated cheese.
