10 Healthy Zucchini Bread Recipes

Zucchini is a good choice for cooking, baking and snacking. It comes in several varieties and the locals where I live usually have a contest to see who can grow the largest zucchini. It has a category at the County and State Fair competitions and can be the prize vegetable in any backyard garden.  High in fiber, anti-oxidants, vitamins and minerals, zucchini is a nice addition to your kitchen grocery list. Try these zucchini bread recipes for a savory addition to your next meal.

1. Grandma’s Zucchini Bread

Ingredients:

  • 2 cups zucchini, peeled and shredded
  • 1 cup vegetable oil
  • ¾ cup clover honey
  • 2 teaspoons vanilla extract
  • 1 cup chopped black walnuts
  • 3 free-ranch eggs
  • 3 cups all-purpose flour
  • ¼ teaspoon baking soda
  • 1 teaspoon fresh cinnamon

Preheat oven to 350 degrees. Mix all ingredients together in large bowl. Place dough in bread pans. Bake for 50-60 minutes. Serve warm! Makes two loaves.

2. Gluten Free Zucchini Bread

Ingredients:

  • 1 medium organic zucchini, peeled and shredded  (about 2 cups)
  • 5 large free-range whole eggs
  • ½ cup organic coconut oil
  • ½ cup organic clover honey
  • ½ teaspoon fresh vanilla extract
  • 1 tablespoon fresh ground cinnamon
  • ½ cup finely chopped almonds
  • ¾ cup organic sifted coconut flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda

Preheat oven to 350 degrees. Combine all ingredients in large mixing bowl. Place dough in muffin cups (2/3 full) or in single-loaf bread pan. Bake for 55 minutes. Makes 2 loaves.

3. Maria’s Zucchini Bread

Ingredients:

  • 2 cups fresh zucchini, peeled and shredded
  • 3 cups organic flour
  • 3 free-range eggs
  • 1 cup organic apple sauce
  • 1 cup organic raisins
  • ½ teaspoon organic nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons fresh cinnamon
  • ½ cup chopped walnuts (or pecans)
  • 1 teaspoon vanilla extract
  • 1 ½ cups organic sugar

Preheat oven to 350 degrees. Mix dry ingredients together, set aside. Mix eggs, vanilla, apple sauce and sugar. Combine all ingredients, adding zucchini, nuts and raisins. Bake for 60 minutes. Makes two loaves.

4. Chocolate Sensation Zucchini Bread

Ingredients:

  • 2 cups fresh zucchini, peeled and shredded
  • 2 large free-range eggs
  • 2 tablespoons coconut oil
  • ½ cup organic sugar
  • 1 ½ cup organic applesauce
  • 2 cups organic flour
  • ¼ teaspoon vanilla extract
  • 3 tablespoons unsweetened organic cocoa powder
  • ½ cup semisweet chocolate chips
  • 1 ¼ teaspoon baking soda
  • 1 tablespoon baking powder
  • Pinch of salt

Preheat oven to 350 degrees. In a large mixing bowl, combine dry ingredients. Add remaining ingredients, folding in chocolate chips. Makes two small loaves or one large loaf. Bake for 60 minutes.

5. Summer-Pineapple Zucchini Bread

Ingredients:

  • 2 cups organic zucchini, peeled and shredded
  • ¾ cups non-fat vanilla yogurt
  • 1 cup crushed pineapple, drained
  • 3 cups organic whole wheat pastry flour
  • 1 cup chopped walnuts (optional)
  • 1 cup raisins (optional)
  • ½ cup applesauce
  • ¼ teaspoon clove
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Pinch of salt

Preheat oven to 350 degrees. Whisk dry ingredients in large bowl. Add remaining ingredients, gently adding zucchini. Bake for 60 minutes. Makes two loaves.

6. Super Easy Zucchini Bread

Ingreditens:

  • 2 cups organic zucchini, peeled and shredded
  • 3 large free-range eggs
  • 1 box organic spice cake mix (available at your health food store)
  • 1 teaspoon coconut oil

Preheat oven to 350 degrees. In a large mixing bowl combine cake mix, eggs and coconut oil. Fold in shredded zucchini. Mix well. Bake for 35-40 minutes. Makes two small loaves or one large loaf. (Makes great muffins, too).

7. Cut The Carbs Zucchini Bread

Ingredients:

  • 2 cups organic zucchini, peeled and shredded
  • 1 cup applesauce
  • 5 free-range large eggs
  • 1 cup almond flour
  • ½ cup butter
  • ½ whole wheat pastry flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon fresh cinnamon
  • 2 tablespoons coconut oil
  • 1 ¼ teaspoons vanilla extract
  • ½ cup chopped walnuts (optional)
  • Pinch of salt

Preheat oven to 350 degrees. In a large mixing bowl combine dry ingredients. Stir in remaining ingredients until well mixed. Stir in zucchini and nuts last.  Bake 50-55 minutes. Makes two small loaves or one large loaf.

8. Coconut Oatmeal Zucchini Bread

Ingredients:

  • 2 cups organic zucchini, peeled and shredded
  • 1 cup old fashioned rolled oats
  • ¾ cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon ground cinnamon
  • ¾ cup organic sugar
  • 2 large free-range eggs
  • ½ cup sweetened shredded coconut
  • Pinch of salt

Preheat oven to 350 degrees. In a large mixing bowl, combine dry ingredients. Add remaining ingredients, folding in the coconut. Makes two small loaves or one large loaf. Bake for 60 minutes.

9. Grain Free Paleo Zucchini Bread

Ingredients

  • 2 cups organic zucchini, peeled and shredded
  • 1 cup chopped dates
  • 6 large free-range eggs
  • 2 bananas, pureed
  • 4 cups almond flour
  • 2 teaspoon baking soda
  • 2 teaspoon pumpkin spice
  • 1/2 cup coconut oil
  • ½  cup chopped walnuts
  • 2/3 cup honey

Preheat oven to 160 degrees. In a large mixing bowl, combine dry ingredients. Add remaining ingredients, folding in the dates. Makes two small loaves or one large loaf. Bake for 40-45minutes.

10. Almond Flour Zucchini Bread

Ingredients:

  • 2 cups organic zucchini, peeled and shredded
  • 2 bananas, pureed
  • ½ cup clover honey
  • 6 large free-range eggs
  • 3 cups blanched almond flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon nutmeg

Preheat oven to 350 degrees. In a large mixing bowl, combine dry ingredients. Stir in remaining ingredients. Makes two small loaves or one large loaf. Bake for 35-40 minutes.
