 Zingy Chilli Lemongrass Chicken Fiesta

If you are looking for a mid week item to spice up and add some much needed zing to your life to snap you out of the blues, this low fat recipe is just your treat!


  • 1-2 long red chillies, chopped
  • 1 lemongrass stem (inner core only), finely chopped
  • 3cm piece ginger, chopped
  • 3 garlic cloves
  • 3 tbsp honey
  • 1 1/2 tbsp mirin (see note)
  • 3 tsp fish sauce
  • 2 tbsp sunflower oil
  • 700g chicken breast fillets, sliced
  • 2 tbsp soy sauce
  • 1 cup (200g) jasmine rice
  • 2 spring onions, thinly sliced
  • 1/2 cup Thai basil (see note) leaves, roughly chopped
  • 1/2 cup coriander leaves, roughly chopped
  • 200g snow peas, blanched, refreshed, thinly sliced


Make a chilli, ginger, garlic and lemon grass paste. Add honey, fish sauce, mirin and a tablespoon of oil and mix till thoroughly combined. Take a bowl and cover the chicken in half the marinade. Take another bowl and add soy to the remaining marinade in it and set it aside.
On the other side, cook rice following the instructions given on the packet. Take 2 tspns of oil in a large pan and cook the chicken for 5-8 minutes on either side over medium-high heat.
Go back to the rice and toss in some spring onion, coriander, basil and snowpeas.
Your zingy chilli lemongrass is ready to be served! Dish out the rice in a serving platter, decorate the chicken over the rice and pour the leftover sauce on top of the chicken generously.

Low Fat Recipe # 2:

Beef Teriyaki and Asian Mushrooms

This simple, easy to cook and delicious low fat recipe is guaranteed to give a joy ride to those taste buds!


  • 2 tbsp soy sauce
  • 2 tbsp dry sherry
  • 2 tsp honey
  • 1 garlic clove, crushed
  • 3cm-piece ginger, peeled, shredded
  • 400g beef rump steak, excess fat trimmed, thinly sliced
  • 1 tbsp peanut oil
  • 150g oyster mushrooms, halved
  • 100g shiitake mushrooms, thickly sliced
  • 100g enoki mushrooms, trimmed
  • 270g packet soba noodles
  • 1/2 bunch watercress, sprigs picked


Mix in soy sauce, garlic, ginger, honey and sherry in a bowl, add the beef to it and refrigerate for 30 minutes.
Separate the beef, draining it, pat dry the meat with a paper towel. Heat a pan with half a teaspoon of oil and fry half the beef on medium-high heat for 2 minutes. Dish out and repeat procedure with the leftover half of the beef. Cover the cooked beef with foil paper. Now it’s time to get to the mushrooms.
Take a wide pan and heat up a teaspoon of oil in it. First fry the oyster mushrooms for 2 minutes, followed by the shitakii mushrooms for 1 minute and the enoki mushrooms for 3o seconds, individually.
Now, add the three mushrooms and beef together. Lastly, cook noodles according to instructions on the packet. Dish the noodles out and top them up with the stir fry. Voila!

Low Fat Recipe # 3:

Cinnamon 100 Calorie Pancakes

These delicious pancakes are only worth 100 calories on paper but a storm of flavor and fun in the stomach!


  • Whole Wheat Flour, 1.25 cup
  • Baking Soda, 1 tsp
  • Splenda No Calorie Sweetener, 2 tbsp
  • Skim Milk, 1 cup
  • Eggbeaters, .5 cup
  • Vanilla extract, 1 tbsp
  • Cinnamon, 2 tbsp


Mix splenda, dry flour and baking soda in a bowl. In another bowl, mix in the eggs, milk and vanilla. In order to add more air to the mix, beat it into a dry mix roughly. Stir in the cinnamon to the mixture. Pour the pancake mixture in the pan and cook till golden brown! Dish out the pancakes and serve them with fresh fruit or sugar free syrup! Enjoy!

Low Fat Recipe # 4:

 Sour Cream Chicken Enchilladas

This low fat sour cream recipe is going to get your taste buds moving in a whirl wind of taste and aroma!


  • 16 oz. fat free sour cream
  • 1 can fat free cream of chicken soup
  • 1 tbls. fresh chopped cilantro (1/2 tbls. dried)
  • 2 1/2 cups cooked shredded chicken breast
  • 1 can Mexican Rotel
  • 1 cup chopped onions
  • 16 corn tortillas
  • 8 oz. shredded pepper jack and colby cheese blend
  • 1 can diced green chillies


Mix in sour cream, cilantro and soup in a pan, heating it through. Set it aside. Take another span, smear it with cooking spray and add the chicken, onions rotel and green chillies and cook till the onions turn transparent.
Warm the tortillas and fill each of them up with 2 tbsp of the chicken mixture and one of cheese. Roll it up and place it with the seam side downwards on a baking dish sprayed with oil or cooking spray. Pour the sour cream on top and sprinkle the remaining cheese over the dish.
Bake for 30 minutes in a 350 degree pre-heated oven. TA-DA!

Low Fat Recipe # 5:

Low Fat Baked Chicken Satay

Check out this amazing low fat beautifully tantalizing dish, ready to serve in 12 to 20 minutes!


  • 500g chicken tenderloins
  • 1 cup low fat yoghurt
  • 1 and a half cups Tandaco stuffing mix

For the creamy satay sauce

  • 1 cup low fat yoghurt
  • 1 tbsp low fat sour cream
  • 2 tbsp sweet chilli sauce
  • 3 tbsp peanut butter mix


Cut chicken into strips, place it in a bowl and mix well with yoghurt. Now, roll the chicken in the stuffing mix and place it on a baking tray lined with paper. Bake at 180 degrees for 20 minutes approx. Serve the chicken with the delicious creamy satay sauce.
