6 Awesome, Healthy Avocado Recipes

May 7, 2015 //

It’s no secret that avocado is good for you. This fruit is chock-full of healthy fats and good vitamins that can help your heart stay healthy, help you lose weight, and maybe even help you avoid cancer. We’ve gathered some easy avocado recipes to help you get more of this delicious, nutritious fruit in your life.

1. Guacamole

This avocado dip recipe is simple and fast. Simply cut an avocado in half and remove the pit. Scoop out the flesh of the avocado with a spoon and place it in a bowl. Mash it with a fork, then add spices to your taste. Salt, pepper, garlic and lemon juice are all good options for guacamole. You can also try adding in a bit of chopped onion or salsa.

Serve your guacamole with whole grain chips or use it as a dip for carrot and celery sticks. You can also use a dollop to add flavor to a healthy salad, to tacos or burritos, or you can add some to your sandwich as a healthy substitute for mayonnaise.

2. Avocado Smoothie

Many people think of avocado as a something that goes best with savory dishes and as something to eat at lunch or dinner. However, it goes great with breakfast too. These avocado smoothies from Eating Well and Bon Appetit both are great ways to start your day.

  • 1 apple (sliced)
  • 1 small stalk celery (chopped)
  • 2 cups lightly packed spinach or kale leaves
  • 1 1-inch piece fresh ginger (peeled)

  • 1 1/4 cups whole milk
  • 1 1/2 tablespoons fresh lime juice

3. Sandwiches

If you’re making a sandwich for lunch, try just adding in a few slices of avocado. There aren’t many healthy avocado recipes easier than this. This obviously works well for savory sandwiches that include meat and cheese, but some people also swear by avocado and peanut butter.

Ripped Recipes’ Peanut Butter Avocado Toast

  • 1 slice bread
  • 1/2 tablespoon peanut butter
  • 1 oz. avocado (mashed)
  • 3/4 tablespoon honey

Simply spread the peanut butter and mashed avocado over the bread, then drizzle the honey over the top and serve.

4. Avocado Eggs

Avocado makes a great addition to eggs. Its creaminess and mild taste help to bring out the eggs’ flavor while improving the dish’s nutrition. Here’s a simple egg and avocado recipe:

  • 2 eggs
  • 1/2 avocado (cubed)
  • 1 slice ham (diced)
  • grated cheese (for sprinkling)
  • salt and pepper

Beat the eggs, add the ham and avocado, season with salt and pepper, and cook in a frying pan. When the eggs are almost done, sprinkle some cheese on top, then serve with whole wheat toast. If you’d like to add more vegetables to this recipe, you can also put in diced tomato, spinach and mushrooms.

5. Avocado in Salads

No list of healthy avocado recipes would be complete without some salads. Avocado makes a perfect addition to salad. In addition to its wonderful nutrients, the creaminess of the avocados may make you want less dressing. Included here are two healthy avocado recipes for salads. One is savory, and the other sweet.

Savory Avocado Salad

  • romaine lettuce
  • 2 hard-boiled eggs
  • diced tomato
  • sliced mushrooms (raw)
  • bacon bits
  • diced ham or turkey
  • 1 cubed avocado

Tear the romaine. Cut the boiled eggs into eighths and add. Add all other ingredients. Serve with a light ranch dressing.

Sweet Avocado Salad

  • romaine lettuce
  • sliced mushrooms
  • sliced strawberries
  • diced apple
  • crumbled walnuts
  • 1 cubed avocado

Add all ingredients together, then toss with a light vinaigrette. If desired, you can substitute the strawberries and apple for other fruits of your choice, such as peaches.

6. Avocado Soup

This great avocado soup from MarkBittman.com is cool, refreshing and simple.

  • 3 to 4 avocados (chopped)
  • 3 cups milk
  • salt and cayenne powder
  • (optional) 2 tablespoons orange or lime juice (freshly squeezed)

Puree the avocado, adding half the milk and salt and cayenne to taste. Beat in the rest of the milk and put in the refrigerator to chill. (If you put a piece of plastic wrap over the soup and press it down onto the surface, this will help to avoid discoloration).

If desired, you can add chopped cherry tomatoes, sliced scallion or mint, boiled crabmeat or shrimp to the soup when you’re about to serve it.
