8 Healthy Grilled-Chicken Recipes

Chicken is high in protein and polyunsaturated fat, which can improve heart health, so it’s a great alternative to red meat, and it tastes delicious too. There are hundreds of ways to prepare chicken, but grilling it is one of the healthiest. Try one of these grilled chicken recipes for a delicious and nutritious meal tonight!

Grilled Tandoori Chicken

Ingredients:

  • 12 ounces plain yogurt
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon ground cloves
  • 2 tablespoons freshly grated ginger
  • 3 cloves garlic, minced
  • 4 teaspoons paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground coriander
  • 16 chicken thighs
  • olive oil

Stir together yogurt, salt, pepper, cloves and ginger, then mix in garlic, paprika, cumin, cinnamon and coriander. Rinse chicken with cold water and dry, placing into a large resealable plastic bag. Pour the yogurt mixture in and make sure it gets distributed well over the chicken. Refrigerate overnight to marinate.

Remove from marinade, wipe off excess mixture and lightly coat in olive oil. Cook on an outdoor grill for 30 to 40 minutes, or to an internal temperature of 180 degrees F. (Courtesy of allrecipes.com)

Honey Mustard Grilled Chicken

Ingredients:

  • ⅓ cup Dijon mustard
  • ¼ cup honey
  • 2 tablespoons mayonnaise
  • 1 teaspoon steak sauce
  • 4 skinless, boneless breast halves

Mix the mustard, honey, mayonnaise and steak sauce. Dip the chicken into the sauce to coat, then grill over indirect heat for 18 to 20 minutes or until juices run clear. Baste with remaining sauce as you cook during the last 10 minutes. (Courtesy of allrecipes.com)

Lemon Basil Grilled Chicken

Ingredients:

  • 6 (4-ounce) boneless, skinless chicken breasts
  • 1 teaspoon grated lemon peel
  • ¼ cup lemon juice
  • 2 teaspoons minced fresh garlic
  • ¼ teaspoon salt
  • 2 tablespoons corn oil
  • ½ cup loosely packed basil leaves

Pound chicken gently to an even ¾ inch thickness. Combine lemon peel, lemon juice, garlic, salt, oil and basil in a food processor. Pour marinade over chicken in a resealable bag, making sure to coat the chicken completely. Marinate in the refrigerator overnight. Shish Tawook Grilled Chicken

Ingredients:

  • ¼ cup lemon juice
  • ¼ cup vegetable oil
  • ¾ cup plain yogurt
  • 4 cloves garlic, minced
  • 2 teaspoons tomato paste
  • 1 ½ teaspoons salt
  • 1 teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground cardamom
  • 2 pounds boneless, skinless chicken breast halves, cut into 2-inch pieces
  • 2 onions, cut into large chunks
  • 1 large green bell pepper, cut into large chunks

Whisk together all ingredients except for chicken, onions and bell pepper. Add chicken and toss to coat, then put coated chicken into a resealable bag and marinate in the refrigerator overnight. Grilled Orange Chicken

Ingredients:

  • ½ cup orange marmalade
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon rubbed sage
  • 2 tablespoons fresh chives
  • 1 (3-pound) chicken, cut into pieces
  • ½ teaspoon garlic salt
  • ¼ teaspoon coarsely ground black pepper

Mix marmalade, vinegar, olive oil and sage in a small saucepan, and cook over low heat for two minutes. Stir in chives. Grilled Chipotle Marinated Chicken

Ingredients:

  • 3 cloves garlic
  • ¾ cup chopped onion
  • 6 tablespoons chopped canned chipotle peppers
  • ¾ cup apple cider vinegar
  • ½ cup water
  • ⅓ cup lime juice
  • 4 teaspoons ground cumin
  • 3 tablespoons paprika
  • 1 tablespoon salt
  • ½ teaspoon black pepper
  • 2 cups Worcestershire sauce
  • 2 (3-pound) whole chickens, cut into pieces

Spicy Mango Chicken

Ingredients:

  • 4 chicken-leg quarters
  • 1 tablespoon chili powder
  • 1 teaspoon ancho chili powder
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 (12.5 fl oz) can mango nectar
  • ¼ cup dark rum
  • ¼ cup orange juice
  • 1 lime, juiced
  • 1 tablespoon honey
  • 2 teaspoons chili paste

Mix dry ingredients in a bowl and rub mixture over raw chicken. Cover and put in the refrigerator for two hours. Coat chicken with olive oil and cook in the oven at 375 degrees F for 45 minutes. Grilled Lemon Chicken

Ingredients:

  • ⅓ cup lemon juice
  • ¼ cup olive oil
  • 1 tablespoon Dijon mustard
  • 2 large cloves garlic, finely chopped
  • 2 tablespoons finely chopped red bell pepper
  • ½ tablespoon salt
  • ¼ teaspoon ground black pepper
  • 4 skinless, boneless chicken breast halves
