8 Ice Cream Sandwiches You’ve Never Tried

Summer’s the perfect time for ice cream sandwiches. Their delicious mix of sweet, creamy, and cold makes them great for enjoying on a hot day. But if you think that the only kind of ice cream sandwich comes in a wrapper, you’re missing out on a whole world of delicious snacking. Here are 8 awesome ideas for ice cream sandwiches that you may not have tried before.

1. Chocolate Chip Cookie and Vanilla

Making your own ice cream sandwich isn’t hard as it seems. Bake some chocolate chip cookies, either using your favorite homemade recipe or using premade dough like Sugarhouse. Spread some vanilla ice cream between two of those cookies and enjoy. You can use fresh, hot cookies if you don’t mind some melting and fast eating. Or, you can let the cookies cool before adding the ice cream, and then stick them in the freezer to get extra cold.

2. Banana Ice Cream and Graham Cracker

If you want a healthier take on the ice cream sandwich, try this. You can make a vegan replacement for ice cream by freezing ripe bananas; let them soften for about 10 minutes outside of the freezer, then process them in your blender. If desired, you can add other ingredients to your ice cream: such as chocolate chips, nuts, cocoa powder, or frozen strawberries or raspberries. The banana ice cream should be about the consistency of soft serve ice cream, so it should be easy to spread. Place the ice cream between two graham crackers and press together to make a sandwich. If you want a firmer consistency, you can place the finished sandwiches in individual sandwich baggies in the freezer firm them up.

3. Hot Weather S’mores

S’mores are delicious, but on hot days, you may want something a little cooler. Well, you can craft a delicious variation on a s’more made specifically for hot weather. Take a chocolate bar, and spread vanilla ice cream on both sides of it, and then place graham crackers on both sides. If you place the chocolate bar in the freezer first, it will develop a delicious crunch. For a decorative flair, drizzle melted chocolate over the graham cracker before placing it in the freezer to harden.

4. Sugar Cookie Berry Sandwich

Soften a little bit of vanilla ice cream, and then mix some berries into it. Strawberries, blackberries, blueberries, and raspberries are all good options for this, and you can use either frozen or fresh berries. Once the berries are well mixed-in, spread some of the ice cream mixture between two sugar cookies and enjoy!

You can also use other kinds of fruit. Use bananas or peach puree if you don’t have berries on hand.

5. Kit-Kat Ice Cream Sandwich

If you want a truly easy, chocolaty ice cream sandwich, take two Kit-Kat bars and place them in the freezer to chill. When you’re ready, pull out the Kit-Kat bars and unwrap them. Spread vanilla ice cream between them, press them together, and eat before it melts. The ice cream, the chocolate, and the cookie filling all work together to make a simple, delicious dessert.

6. Homemade Easy Ice Cream Sandwiches

We’ve covered a number of unique and different ways to make ice cream sandwiches, but what if you’re a fan of the classics? If you want something as close as possible to the sort of thing you’d find in the store, it is possible to make a similar (if tastier) dish.

To make the cookies, mix together one package of chocolate cake mix with 1/2 cup of softened butter, 2 eggs, 1 teaspoon of vanilla extract, 1/2 cup of semisweet chocolate chips and 1/2 cup of butterscotch chips. Separate these into 2-inch balls, and place them on greased cookie sheets. Bake the cookies for 10 minutes at 350 F. This recipe will make enough cookies for 12 sandwiches.

7. Brownies and Raspberry Ice Cream

If you want a decadent and gourmet version of the ice cream sandwich, first bake brownies using your favorite recipe. Then, once the brownies have cooled, make sandwiches using gourmet raspberry ice cream. The tart fruit flavor mixes well with the chocolaty deliciousness of the brownie. If you want to be even more gourmet, soften the ice cream and mix some fresh raspberries in with it before you make the sandwiches.

For a different taste sensation, skip the raspberry ice cream and use mint ice cream instead. Top with a few fresh mint leaves and serve.

8. Mini Strawberry Ice Cream Sandwiches

If you want to make a fancy finger food dessert for your next party, try making mini-strawberry ice cream sandwiches. To make each miniature sandwich, get two ‘Nilla Wafers, and spread strawberry ice cream between them.
