Seven Delicious Healthy Recipes with Avocado

Avocados are a delicious and nutritious fruit. They are an excellent source of Omega-3 fatty acids. Avocados also have a higher percentage of protein than other fruits while maintaining lower levels of sugar.

This little green superfood is also one of the most versatile items in the produce sections. From smoothies to breakfast and desserts: avocados can be part of any meal! Don’t limit yourself to guacamole, there are plenty of inventive ways to eat avocado. Here are seven delicious and healthy recipes any avocado fan would love!

1. Egg Baked in Avocado

Serves 1

Ingredients

  • 2 eggs
  • 1 avocado

Instructions

  1. Preheat oven to 425 degrees F.
  2. Wash the avocado, slice in half and remove the pit.
  3. Crack one egg into the hollow of each half.
  4. Bake at 425 for 15 minutes.

2. Breakfast Salad

Serves 1

Ingredients

  • 2 cups Spinach
  • 2 strips bacon
  • 2 hard-boiled eggs
  • 1 tomato, chopped
  • 1/2 avocado, diced

Instructions

  1. Cook bacon according to directions on the package.
  2. Meanwhile, wash and chop the spinach, tomato, avocado, and hard boiled eggs.
  3. Let the bacon cool, then crumble it.
  4. Toss all ingredients together in one bowl.
  5. Add salad dressing if you'd like.

3. Avocado Chicken Salad Lettuce Wraps

Serves 1

Ingredients

  • 1 can (5 oz) chicken breast in water
  • 1/2  avocado
  • 1 diced tomato
  • 1/2 tsp cumin
  • Juice of half a lime
  • 4 butter lettuce leaves
  • 1 Tbsp fresh cilantro

Instructions

  1. Cut open the avocado and scoop the flesh out into a bowl.
  2. Smash avocado with a fork until it is fairly smooth.
  3. Mix the tomato, cumin, and lime juice.
  4. Add the chicken and stir until chicken chunks are coated with the avocado mixture.
  5. Use the lettuce leaves as wraps and top with fresh cilantro.

4. Creamy Avocado Pesto on Quinoa with Roasted Red Peppers

Serves 4

Ingredients

  • 1 cup of quinoa, rinsed and dried
  • Ripe avocado, peeled, pitted, and diced
  • 1 cup (packed) fresh basil leaves
  • 1/3 cup pine nuts
  • 3 cloves garlic, chopped
  • Juice of 1 lemon
  • 2 Tbsp extra-virgin olive oil
  • 1 roasted red pepper, diced

Instructions

  1. Bring two cups of water to a boil.
  2. Rinse and dry the quinoa.
  3. Add quinoa and simmer for 15 minutes.
  4. Meanwhile, puree avocado, basil, pine nuts, and garlic in a food processor or blender.
  5. Slowly stream in the lemon juice, olive oil, while the machine is running.
  6. Puree until completely blended and creamy.
  7. Season with salt and pepper to taste.
  8. After the quinoa has cooled, coat it with pesto and top with roasted red peppers.

5. Green Ranch Salad

Serves 4

Dressing Ingredients

  • 1 avocado
  • 3 roasted garlic cloves
  • 1 cup Greek yogurt
  • Juice of 1/2 lemon
  • 2 Tbsp fresh dill
  • 3 Tbsp chives
  • 2 Tbsp green onions, chopped
  • 1/2 tsp Paprika
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper

Dressing Instructions

  1. Cut open the avocado and scoop the flesh out.
  2. Puree in a food processor.
  3. Add all the other ingredients and puree until smooth.
  4. Add salt and pepper to taste.

Salad Ingredients

  • 2 cups romaine lettuce, chopped
  • 2 cups butter leaf lettuce, chopped
  • 1 tomato, diced
  • 1 carrot, shredded
  • 1 cucumber, sliced thin
  • 1/4 pound fresh green beans, blanched and chopped

Instructions

  1. Wash and blanch the green beans.
  2. While the green beans cool, wash and cut the other veggies accordingly.
  3. Chop the green beans.
  4. Toss all ingredients along with 1/2 of the dressing.

6. Avocado Protein Mousse

Serves 2

Ingredients

  • 1 ripe avocado
  • 1 ripe banana
  • 2 scoops chocolate protein powder
  • 1 Tbsp maple syrup

Instructions

  1. Peel and cut the banana into sections before freezing for four or more hours.
  2. Cut open the avocado and scoop the flesh out.
  3. Puree the avocado and banana in a food processor.
  4. Add all the other ingredients and puree until smooth.

7. Put a Lime in the Coconut Smoothie

Serves 2

Ingredients

  • 1 ripe avocado
  • 1/2 cup full fat coconut milk
  • 1 cup unsweetened almond milk
  • 1 scoop vanilla protein powder
  • Juice of 1 lime
  • 1 Tbsp agave nectar

Instructions

  1. Cut open the avocado and scoop the flesh out.
  2. Puree the avocado and coconut milk in a blender.
  3. Add all the other ingredients and puree until smooth.
  4. You can adjust the agave nectar and lime juice to suit your tastes.
