  • Blanched almonds | 0.50 cup whole kernels

  1. Slice the almonds. Take a 9-by-13-inch baking sheet, grease it with the oil. Take a heavy-bottom saucepan; put together the sugar and 2 tbsp of the water in it. Heat, cook at a low heat until sugar is dissolved.
  2. Cover the pan and bring the mixture to boil. Lower down the heat and cook, until the sugar changes into amber color. Then stir in the almonds. Ladle the mixture onto prepared baking sheet. Leave the mixture at room temperature to cool completely.
  3. Break the cool mixture into pieces, reserving some for garnish. Take four dessert glasses, scoop 0.25 cup of ice cream into each glass. Scatter with the brittle and garnish with the large shard.
