Ingredients

  • Apple(s) without skin, raw | 5.00 cup slices
  • Granulated sugar | 1.00 cup
  • Seedless raisins | 1.00 cup, packed
  • Pecans | 0.50 cup, chopped
  • Palm kernel oil | 0.25 cup
  • Egg, whole, raw | 1.00 small
  • Wheat flour, white, all-purpose, enriched, unbleached | 2.00 cup
  • Baking soda | 1.00 tsp
  • Spices, cinnamon, ground | 2.00 tsp
  • Coffee, instant, regular, powder | 1.50 tsp

Instructions

  1. Preheat oven to 350ºF.
  2. Lightly grease 9- x 2 inch pan with oil. In large mixing bowl, combine grated apples with sugar, raisins, and pecans. Mix well and let stand for 30 minutes.
  3. Dissolve 1 ½ tsp coffee in some water to make paste. In another bowl put oil, vanilla, egg and coffee mixture. Add in the apple mixture.
  4. Sift together flour, soda, and cinnamon, and stir into apple, egg and coffee mixture, about 1/3 at a time just enough to moisten dry ingredients.
  5. Turn batter into pan. Bake for 40 minutes. Cool cake slightly before serving.
