Ingredients

  • Butter without salt | 1.00 tbsp
  • Apple(s) without skin, raw | 4.00 cup slices
  • Brown sugar | 0.50 cup packed
  • Lime juice, raw | 2.00 tbsp
  • Drinking tap water | 2.00 tbsp
  • Spices, ginger, ground | 0.50 tsp
  • Salt | 0.13 tsp
  • Cheese, cottage, creamed | 2.00 cup, small curd not packed
  • Low fat cream cheese | 0.25 cup
  • Granulated sugar | 0.33 cup

Instructions

  1. Melt the butter in a large nonstick skillet over medium-high heat.
  2. Add peeled and diced apple, lime juice, brown sugar, water, ground ginger and salt and cook 12 minutes or until liquid is almost absorbed. Remove from heat.
  3. Place cottage cheese in a food processor, and process until smooth (about 2 minutes).
  4. Add cream cheese, granulated sugar and vanilla; process until smooth.
  5. Spoon 2 tablespoons of cottage cheese mixture into each of 6 parfait glasses, and top each with 2 tablespoons apple mixture.
  6. Repeat procedure with 3 tablespoons cheese mixture and 2 tablespoons apple mixture, ending with 3 tablespoons cream cheese mixture.
  7. Cover and chill at least 4 hours.
