  • Reduced sodium vegetable soup | 1.00 can (10.75 oz)
  • Leeks, raw | 1.00 leek
  • Brown rice, long grain, raw | 1.00 cup
  • Apple cider vinegar | 1.00 cup
  • Apples, raw, with skin | 1.00 medium 3" dia
  • Pecans | 0.50 cup, chopped

  1. Rinse the leeks and then thinly slice it, rinse again and then drain it; peel, core and finely chop apple. Now put together leek, rice, broth and cider in a medium sauce pan. Heat pan, bring to boil, and stir once.
  2. Lower down heat and cover; cook for 40 minutes. Add apple at the top and then again cover and simmer for 5 minutes until the liquid is absorbed. Put the pan away from heat and cover for about 5 minutes.
  3. Scatter over the pecans and serve.
