Ingredients

  • White potatoes, raw | 2.00 potato large 3 to 4-1/4" dia
  • Olive oil | 1.00 tablespoon
  • Butter without salt | 2.00 tbsp
  • Apples, raw, with skin | 2.00 small 2-3/4" dia
  • Onions raw | 1.00 small
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash

Instructions

  1. Prick potatoes several times each with a fork and microwave on high for 10 to 12 minutes.
  2. Cool potatoes until you can handle them and chop.
  3. Heat a medium nonstick skillet over medium-high heat with extra-virgin olive oil and butter.
  4. Add chopped apples and chopped onions and cook 5 minutes, add potatoes and season with salt and pepper, to taste.
  5. Crisp and brown the potatoes with apples and onions 5 minutes more, then serve.
