Ingredients

  • Palm kernel oil | 0.25 cup
  • Granulated sugar | 0.50 cup
  • Egg, whole, raw | 1.00 small
  • Unsweetened apple sauce with added ascorbic acid | 0.50 cup
  • Whole grain wheat flour | 0.50 cup
  • Wheat flour, white, all-purpose, enriched, unbleached | 0.50 cup
  • Low sodium baking powder | 2.00 tsp
  • Baking soda | 0.50 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Spices, cloves, ground | 0.12 tsp
  • Whole wheat, rolled oats, presweetened, with pecans, cereal | 0.50 cup 1 NLEA serving
  • Seedless golden raisins | 0.50 cup, packed

Instructions

  1. Cream the oil and sugar together.
  2. Add the egg and beat until light.
  3. Blend the vanilla and applesauce.
  4. Stir the flours, baking powder, baking soda, ground cinnamon and cloves, oats, and raisins into the creamed mixture.
  5. Blend well. Drop by teaspoonfuls onto lightly oiled baking sheets.
  6. Bake in a pre-heated oven at 375 F for 12 minutes, cool on a wire rack.
