Applesauce Spice Cake Recipe

Ingredients

  • Wheat flour, white, all-purpose, enriched, calcium-fortified | 2.00 cup
  • Egg, whole, raw | 3.00 medium
  • Brown sugar | 1.00 cup packed
  • Margarine, regular, 80% fat, tub, without salt | 0.50 cup
  • Baking soda | 1.50 tsp
  • Baking powder | 4.00 tsp
  • Salt | 0.50 tsp
  • Spices, cinnamon, ground | 1.50 tsp
  • Spices, nutmeg, ground | 0.50 tsp
  • Spices, allspice, ground | 0.50 tsp
  • Applesauce, canned, unsweetened, without added ascorbic acid | 1.50 cup
  • Seedless raisins | 1.00 cup, packed
  • Dried walnuts | 0.50 cup, chopped

Instructions

  1. Spray nonstick cooking spray on a 9” by 13” baking pan. Preheat oven to 350°F.
  2. In a mixing bowl, cream the margarine with a fork till smooth and soft, slowly adding brown sugar. Pour the eggs, one at a time, continuing to cream.
  3. Combine dry ingredients of baking soda, baking powder, flour, salt and spices in another bowl. Now add small portions of flour mixture and applesauce to creamed margarine, stirring. Add raisins and nuts.
  4. Bake the batter for 40 minutes or until golden brown, testing with a toothpick. Serve cold, sliced.
