Apricot Fruit Leather Rolls

Ingredients

  • Drinking water | 3.00 cup 8 fl oz
  • Dried apricots, uncooked | 2.00 cup, halves
  • Granulated sugar | 0.50 cup

Instructions

  1. Place rack in center of preheated oven (160 degrees). Put the apricots in a large bowl of water and soak for 30 -45 minutes, covered until soft. Drain from a fine sieve and separate the fluid.
  2. You will need a food processor with a metal blade fitted; gently place apricots in the food processor bowl with honey and sugar. Turn on the processor and blend until mixture is smooth and spreadable, add 1 tbsp soaking liquid to help thin the mixture.
  3. Line baking sheets on two 10 by 15 inch baking sheets. Spread a thin layer with an offset spatula on both the sheets evenly. Dry the sheets out in the oven for 8 hours or overnight, till spread is firm and slightly tacky. Cool the sheets and peel fruit leather from plastic wrap. Cut into an inch wide strips with pizza cutter, rolling into cylinders to serve.
