Ingredients

  • Carrots, raw | 8.00 medium
  • Dried apricots, uncooked | 0.50 cup, halves
  • Orange juice, raw | 0.50 cup
  • Butter without salt | 1.00 tbsp
  • Brown sugar | 1.50 tsp packed
  • Salt | 0.50 tsp
  • Orange(s) | 1.00 small 2-3/8" dia
  • Spices, ginger, ground | 0.13 tsp

Instructions

  1. Slice the carrots; take orange and grate the orange zest about 1/4 tsp.
  2. Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 9-11 minutes or until crisp-tender. Drain and set aside.
  3. In the same pan, combine the remaining ingredients; cook and stir until lightly thickened. Return carrots to the pan; stir until glazed and heated through.
  4. Ready to serve with any dish you like.
