Aromatic Peach and Cucumber Salsa Recipe

Ingredients

  • Peaches, raw | 2.00 medium 2-2/3" dia
  • Cucumber, with peel, raw | 1.00 cucumber 8-1/4"
  • Red wine vinegar | 0.50 tsp
  • Olive oil | 1.00 tablespoon
  • Lemon juice, raw | 2.00 tsp
  • Fresh peppermint | 2.00 tbsp
  • Salt | 2.00 dash
  • Spices, pepper, black | 2.00 dash

Instructions

  1. With a sharp knife, score a line around circumference of each peach, just to remove the skin and not flesh.
  2. Now blanch these peaches in a pan of boiling water for 1 minute, drain and wash with cold water.
  3. Once cooled, peel off the skin and halve each peach removing its stone then dice finely.
  4. Prepare cucumber by trimming the ends and dice it too. Put the cucumber and peaches in a large mixing bowl.
  5. Now prepare the dressing by mixing together vinegar, olive oil and lemon juice.
  6. Stir it in the cucumber and peach mixture. Season with salt and pepper and sprinkle chopped mint.
  7. Chill this salsa for an hour and serve.
