  • Onions raw | 1.00 medium 2-1/2" dia
  • Palm kernel oil | 2.00 tablespoon
  • Butter without salt | 0.50 oz
  • Egg, whole, raw | 1.00 small
  • Parsley, raw | 2.00 tbsp
  • Spices, pepper, black | 1.00 dash
  • Russet potatoes, raw | 4.00 Potato medium 2-1/4" to 3-1/4" dia
  • Wheat flour bleached | 0.33 cup
  • Pork, cured, bacon, raw | 2.00 slices

  1. Chop onion and bacon slices, peel the potatoes and then grate them roughly. Squeeze out any access water from the potatoes. Beat the egg and keep aside.
  2. Heat a non-stick frying pan, melt butter with a tbsp of oil in it.
  3. Now put onion and bacon, cook for 8 minutes then clean the pan.
  4. Take a large bowl, place potatoes together with the onion mixture, egg, parsley, flour and seasoning.
  5. Heat half of the remaining oil in pan and add potato mixture. Press into a flat round with a wooden spoon.
  6. Cook for 10 minutes at low heat.
  7. Turn over the cake, add remaining oil in pan, again cook in the same manner until the base is crisp and golden.
  8. Bacon,onion and potato cake is ready to serve!
