Ingredients

  • Vanilla ice cream, unsweetened, light | 1.00 serving 1/2 cup
  • Pears, raw | 1.00 medium
  • Spices, cinnamon, ground | 0.13 tsp
  • Dry roasted almonds, no salt | 0.13 oz
  • Dried cranberries/craisins, sweetened | 0.13 cup
  • unsweetened canned apple juice | 0.33 cup

Instructions

  1. Wash, cut in lengthwise and core the pear. Preheat oven to 350°F.
  2. Combine 1 teaspoon of apple juice, dried cranberries, almonds and cinnamon in a small bowl.
  3. Place pear halves, cut sides up, in a small baking dish. Evenly mound the almond mixture on top of pear halves.
  4. Pour remaining juice in the dish. Cover with foil.
  5. Bake pear halves for 35-40 minutes or until pears are soft, spooning the juice in dish over pears once or twice during baking.
  6. Serve warm with chilled ice cream.
