Ingredients

  • Sweet potato, raw | 4.00 sweetpotato, 5" long
  • Beans, fava, in pod, raw | 1.00 cup
  • Corn, sweet, white, frozen, kernels cut off cob, unprepared | 0.75 cup
  • Beans, snap, green, raw | 0.50 cup
  • Tomatoes, red, raw | 0.33 cup, chopped or sliced
  • Olive oil | 1.00 tablespoon
  • Balsamic vinegar | 1.00 tbsp
  • Spices, pepper, black | 1.00 dash
  • Fresh basil | 3.00 tbsp, chopped

Instructions

  1. Heat oven to 375°F.

  5. Cut the potatoes half, open up, put the corn and bean filling between potatoes, garnish with basil leaves and serve.
