Ingredients

  • Self-rising enriched wheat flour | 2.00 cup
  • Baking soda | 2.00 tsp
  • Salt | 0.25 tsp
  • Butter without salt | 0.50 cup
  • Egg, whole, raw | 0.50 medium
  • Bananas, raw | 2.50 cup, mashed
  • Brown sugar | 0.75 cup packed

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 9×5 inch loaf pan.
  3. In a large bowl, combine flour, baking soda and salt.
  4. In a separate bowl, cream together butter and brown sugar.
  5. Stir in eggs and mashed bananas until well blended.
  6. Stir banana mixture into flour mixture; stir until well combined. Pour batter into prepared loaf pan.
  7. Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.
  8. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to finish cooling.
