Ingredients

  • Baking soda | 1.00 tsp
  • Bananas, raw | 2.00 medium 7" to 7-7/8" long
  • Self-rising enriched wheat flour | 1.00 cup
  • Granulated sugar | 0.50 cup
  • Egg, whole, raw | 2.00 medium
  • Spices, cinnamon, ground | 1.00 tsp
  • Medjool dates | 15.00 date, pitted
  • English walnuts | 0.50 cup, chopped
  • Grape juice, canned, unsweetened, with added ascorbic acid | 1.00 cup
  • Butter without salt | 2.00 tbsp

Instructions

  1. Preheat the oven to 160ºC.
  2. Line square cake tin (195 x 195 x 48mm) with nonstick paper.
  3. Bring grape juice to the boil in a saucepan, then turn off heat. Add dates. Place lid on and cool.
  4. When are softened, mashed them gently.
  5. In a small bowl, mix the flour and cinnamon until well combined. Set aside.
  6. In a big bowl, beat the butter with the sugar.
  7. Add in 2 Tbsp of the honey and the eggs. Beat and mix well.
  8. Add the flour mixture and mix with a wooden spoon.
  9. Tip in the mashed banana and dates, mix until well blended.
  10. Pour into the prepared loaf pan. Scatter the chopped walnuts evenly on top.
  11. Bake for about 1 hour. Press the top lightly, it should be firm. If not, bake for another 10 minutes.
  12. Remove from oven and cool in the pan for 10 minutes.
  13. Lift out of the pan and drizzle the remaining 1 Tbsp honey on top.
  14. Cool completely.
