Ingredients

  • Egg, whole, raw | 2.00 medium
  • Granulated sugar | 0.67 cup
  • Bananas, raw | 1.00 cup, mashed
  • Wheat flour, white, all-purpose, unenriched | 0.75 cup
  • Low sodium baking powder | 3.00 tsp
  • Salt | 0.50 tsp
  • Candied fruit | 1.00 cup
  • Seeded raisins | 0.50 cup, packed
  • English walnuts | 0.50 cup, chopped

Instructions

  1. In a bowl, beat eggs and sugar. Add bananas; mix well.
  2. Combine the flour, baking powder and salt; gradually add to egg mixture.
  3. Fold in candied fruit, raisins and walnuts.
  4. Transfer to three greased 5-3/4-in. x 3-in. x 2-in. loaf pans.
  5. Bake at 350° for 30-35 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before removing from pans to wire racks to cool completely.
