Ingredients

  • Shortening, vegetable, household | 0.50 cup
  • Brown sugar | 0.50 cup packed
  • Granulated sugar | 0.50 cup
  • Egg, whole, raw | 2.00 medium
  • Bananas, raw | 1.00 cup, mashed
  • Whole grain wheat flour | 2.00 cup
  • Baking soda | 1.00 tsp
  • Salt | 1.00 tsp
  • Dry buttermilk | 0.50 cup
  • Dry roasted mixed nuts, no salt | 0.50 cup
  • Butter salted | 0.25 cup
  • Whole milk with added vitamin D | 6.00 tbsp
  • Powdered sugar | 3.00 cup unsifted

Instructions

  1. In a large bowl, cream shortening and sugars until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine flour, baking soda and salt; add to the creamed mixture alternately with buttermilk, beating well after each addition. Stir in nuts.
  3. Pour into a greased 13-in. x 9-in. baking pan.
  4. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  5. For frosting:
  6. In a large saucepan, combine the brown sugar, butter and milk.
  7. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; cool to lukewarm.
  8. Gradually beat in powdered sugar until frosting reaches spreading consistency. Frost cake.
