Barley and Swiss Chard Skillet Casserole Recipe

Ingredients

  • Drinking tap water | 1.00 cup 8 fl oz
  • Barley, pearled, raw | 0.75 cup
  • Peppers, sweet, red, raw | 1.00 cup, chopped
  • Sweet Green peppers, raw | 1.00 cup, chopped
  • Spices, garlic powder | 0.13 tsp
  • Hot chili red pepper, raw | 1.00 pepper
  • Chard, swiss, raw | 2.00 cup
  • Navy beans, canned | 1.00 cup
  • Tomatoes, red, raw | 1.00 cup, chopped or sliced
  • Fresh basil | 0.25 cup chopped
  • Olive oil | 2.00 tablespoon
  • Seasoned dry bread crumbs | 2.00 oz

Instructions

  1. Crush pepper and take 1/8 tsp of it.
  2. Rinsed and drained canned navy beans.
  3. Preheat broiler.
  4. Bring water to a boil in large skillet. Add barley, sweet pepper , garlic powder and pepper flakes. Reduce heat; cover tightly and simmer 10 minutes or until liquid is absorbed.
  5. Remove skillet from heat. Stir in chard, beans, tomatoes, basil and olive oil. Sprinkle evenly with bread crumbs.Broil uncovered 2 minutes or until golden.
