  • Wheat flour, white, all-purpose, enriched, calcium-fortified | 2.00 tbsp
  • Butter without salt | 2.00 tbsp
  • Soybeans, green, raw | 2.00 cup
  • Salt | 1.00 tsp
  • Spices, pepper, black | 0.13 tsp, ground
  • Chicken broth, soup, fat free | 1.50 serving 1 cup 8 oz
  • Egg, yolk, raw | 2.00 large
  • Whole milk | 0.50 cup
  • Parsley, raw | 1.00 cup chopped

  1. Trim the beans.
  2. In a large saucepan, toss in your beans and cover with water. Bring to heat and boil for 10 minutes. They should turn somewhat tender.
  3. Bring a large skillet to medium heat and melt the butter. Add in the flour plus the salt and pepper for seasoning whilst stirring.
  4. Eventually, blend in the chicken broth. Allow to boil for a few minutes whilst stirring. It should thicken. Take off from heat.
  5. Now, in a small bowl, blend in the milk with the egg yolks. Pour a little bit of the hot broth mixture into the egg mixture. Pour this back into the pan while stirring thoroughly.
  6. Bring this to boil and stir for a few minutes. It should turn thick. Toss in the parsley. Eliminate water from the beans and serve with the sauce!
