Ingredients

  • Margarine, regular, hard, soybean hydrogenated | 1.00 tbsp
  • Onions raw | 0.75 cup, chopped
  • White mushrooms raw | 2.00 cup, whole
  • Veal, leg top round, lean, raw | 12.00 oz
  • Cornstarch | 0.50 oz
  • Sauce, worcestershire | 1.00 tsp
  • Yogurt, plain, skim milk | 1.00 cup 8 fl oz
  • Brown rice, long grain, raw | 4.00 cup
  • Beef broth and tomato juice, canned | 1.00 can 5.5 oz
  • Tomato paste, canned without salt | 0.25 cup

Instructions

  1. Melt margarine in large skillet.
  2. Saute onions until soft.
  3. Add beef; brown for approx. 5 min.
  4. Stir in broth, tomato paste & Worcestershire sauce.
  5. Cover & simmer gently, 1 1/4 hours.
  6. Add mushrooms & simmer 15 minutes.
  7. In separate pan, mix cornstarch w/ 1TBS yogurt, then stir in remaining yogurt and cook over med heat until thickened.
  8. Add to meat mixture and heat thoroughly.
  9. Serve over rice.
