Ingredients

  • Egg, whole, raw | 3.00 small
  • Butter without salt | 3.00 tbsp
  • Coconut meat | 6.00 tsp
  • Low sodium baking powder | 0.25 tsp
  • Cornmeal, whole-grain, yellow | 0.20 cup
  • Cake wheat flour, enriched | 1.00 cup unsifted, dipped

Instructions

  1. Blend together eggs, butter, honey, vanilla, and salt.
  2. Sift flour and baking powder, and then add corn meal.

  5. Fill muffin cups halfway with batter.
