- Remove and discard stems and end tips from okra then slice. Chop scallions, onion, jalapeno pepper and celery leaves. Peel and wash shrimp, chop in small pieces. Set aside.
- Take a large heavy saucepan; heat up vegetable oil into, add chopped ingredients except shrimp, add black pepper and mix well. Cook for few minutes on low heat.
- Increase the heat to medium; add shrimp and cook for 3 minutes then add okra, stir occasionally so that it can’t stick to the bottom of pan.
- Fry okra with shrimp for 7 minutes until okra edges turn into brown, add salt and stir well. Shift to a serving platter now and serve immediately.
