Ingredients

  • Black beans, raw | 3.00 cup
  • White rice, long grain, cooked | 1.00 cup
  • Hot chili red pepper, raw | 1.00 pepper
  • Sweet Yellow peppers | 1.00 pepper, large 3-3/4" long, 3" dia
  • Sweet Green peppers, raw | 1.00 medium
  • Onions raw | 2.00 tbsp chopped
  • Cilantro, Fresh, Chopped | 1.50 oz
  • Cooked tomatoes | 1.00 medium
  • Olive oil | 1.00 tablespoon
  • Red wine vinegar | 3.00 tbsp
  • Spices, pepper, black | 1.00 dash
  • Corn, sweet, yellow, cooked, boiled, drained, without salt | 1.00 cup

Instructions

  1. Chop peppers, cilantro and set aside.
  2. Place beans in pot and add water to cover the beans. Bring to a boil.
  3. Reduce heat and simmer for one hour or until tender. Drain and rinse well under cold water.
  4. Mix black beans with remaining ingredients. Season to taste with pepper. Serve chilled.
