Ingredients

  • Beans, black, boiled, without salt | 2.00 cup
  • Drinking tap water | 1.50 cup 8 fl oz
  • Spices, chili powder | 1.00 tsp
  • Tomatoes, red, raw | 3.00 slice, medium 1/4" thick
  • green onions tops | 1.00 cup chopped
  • Waterchesnuts, raw | 1.00 cup slices
  • Peppers, sweet, red, raw | 2.00 medium approx 2-3/4" long, 2-1/2 dia.
  • Cilantro, Fresh, Chopped | 1.00 Cup
  • Avocados, raw | 1.00 avocado, NS as to Florida or California
  • Brown rice, long grain, cooked | 3.00 cup
  • Soy sauce made from soy tamari | 1.00 tbsp

Instructions

  1. Heat the beans with water and chili powder untill done.
  2. Place the chopped vegetables and cilantro in bowls.
  3. To serve, place several big spoonfuls of brown rice onto large plates and ladle beans on top.
  4. Add generous handfuls of chopped vegetables, cilantro, and avocado on top of the beans.
  5. Add salsa or tamari to taste.
