  • Black eye peas, canned | 1.00 cup
  • Celery, raw | 0.50 cup chopped
  • Palm kernel oil | 1.00 tablespoon
  • Apple cider vinegar | 1.00 tbsp
  • Mayonnaise, diet, cholesterol free | 1.00 tbsp
  • Salt | 0.25 tsp
  • Tomatoes, orange, raw | 1.00 tomato

Instructions

  1. Take out the tomato seeds and chop finely.
  2. In a large bowl, combine the peas, celery and onion.
  3. In a small bowl, whisk the oil, vinegar, mayonnaise, salt and cayenne pepper.
  4. Stir into vegetable mixture. Cover and chill until serving.
  5. Stir in tomato just before serving.
