  • Corn grits, dry, enriched, cereal | 0.75 cup
  • Granulated sugar | 0.50 cup
  • Salt | 0.50 tsp
  • Low sodium baking powder | 0.50 tsp
  • Baking soda | 0.25 tsp
  • Canola oil | 3.00 tbsp
  • Egg, whole, raw | 2.00 medium

  1. Heat the oven at a temperature of 350?F. Now put together the sugar, flours, baking powder, grits, baking soda and salt in a large bowl. In another bowl; put together the banana, blueberries, oil and eggs.
  2. Make a well in the centre of flour mixture and then ladle the fruit mixture in to the centre. Combine them until just moist. Take an 8x4-inch loaf pan coated with the cooking spray.
  3. Then place the pan in the oven and bake for an hour at 350?F. Leave in the pan to cool for 10 minutes on the wire rack. Take out from the pan and leave to cool completely on wire rack.
