Ingredients

  • Brown rice, medium grain, cooked | 3.00 cup
  • Blueberries, raw | 3.00 cup
  • Brown sugar | 0.25 cup packed
  • Brown sugar | 3.00 tbsp packed
  • Rice bran | 0.33 cup
  • Whole grain wheat flour | 0.25 cup
  • Dried walnuts | 0.25 cup, chopped
  • Spices, cinnamon, ground | 1.00 tsp
  • Margarine, regular, 80% fat, tub, without salt | 3.00 tbsp

Instructions

  1. Preheat oven to 375*F.
  2. Coat 8 individual custard cups or 2-quart baking dish with nonstick cooking spray. Combine rice, blueberries and 3 tablespoon sugar. Place rice mixture in cup or baking dish; set aside.
  3. Combine bran, flour,walnut , remaining 1/4 cup sugar and cinnamon in bowl.Cut in margarine with pastry blender until mixture resembles coarse meal. Sprinkle over rice mixture.
  4. Bake 15 to 20 minutes or until thoroughly heated.
  5. Serve warm.
