- Heat an oven at 375° F. Grease soufflé dish with butter. Take a pan, boil salted water and cook broccoli until softened.
- Add egg yolks with the broccoli in a food processor and process till creamy. Putting the mixture in a bowl add mustard, blue cheese and season to taste. Set aside.
- Take a bowl and whip egg whites until firm, smoothly mix with broccoli mixture in three turns. Pour broccoli mixture in a dish and bake for 35 minutes until golden. Serve hot.
