Ingredients

  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Blue cheese | 4.00 oz
  • Mustard, prepared, yellow | 2.00 tsp
  • Broccoli, raw | 22.00 oz
  • Egg, white, raw | 2.00 large
  • Egg, yolk, raw | 2.00 large

Instructions

  1. Heat an oven at 375° F. Grease soufflé dish with butter. Take a pan, boil salted water and cook broccoli until softened.
  2. Add egg yolks with the broccoli in a food processor and process till creamy. Putting the mixture in a bowl add mustard, blue cheese and season to taste. Set aside.
  3. Take a bowl and whip egg whites until firm, smoothly mix with broccoli mixture in three turns. Pour broccoli mixture in a dish and bake for 35 minutes until golden. Serve hot.
