Ingredients

  • Onions raw | 1.00 medium 2-1/2" dia
  • Hot green chilli peppers, raw | 1.00 pepper
  • Olive oil | 1.00 tablespoon
  • Brown rice, long grain, raw | 1.25 cup
  • Garlic, raw | 2.00 Tbsp
  • Drinking tap water | 1.50 cup 8 fl oz
  • chicken broth canned, reduced sodium | 1.00 cup
  • Spices, thyme, dried | 0.50 tsp, ground
  • Spices, pepper, black | 0.25 tsp, ground

Instructions

  1. Chop the onion.In large saucepan, saute onion and green pepper in oil until tender.
  2. Add rice and garlic; cook and stir for 3-4 minutes or until rice is lightly browned.
  3. Add the water, broth, thyme and pepper.
  4. Bring to a boil.Reduce heat; cover and simmer for 35-40 minutes or until rice is tender.
  5. Fluff with fork, and adjust seasonings according to taste.
