Ingredients

  • Tomatoes, red, raw | 3.00 large whole 3" dia
  • Onions raw | 0.50 large
  • Cucumber, peeled, raw | 1.00 medium
  • Fresh basil | 1.00 cup chopped
  • Red wine vinegar | 1.00 tbsp
  • Olive oil | 2.00 tablespoon
  • Italian bread | 16.00 oz
  • Garlic, raw | 2.00 Tbsp

Instructions

  1. Combine tomatoes, onion, cucumber, basil, vinegar, and 1 tablespoon oil in a glass bowl.
  2. Allow to sit 15 to 30 minutes for flavors to blend.
  3. Toast bread until lightly browned.
  4. Rub 1 side of each bread slice with garlic.
  5. Brush same side with remaining oil.
  6. Spoon tomato mixture over oiled side of bread and serve.
