Ingredients

  • Wheat flour, white, all-purpose, unenriched | 2.00 cup
  • Whole grain wheat flour | 1.00 cup
  • Baking soda | 2.00 tsp
  • Spices, cinnamon, ground | 1.00 tsp
  • Salt | 0.50 tsp
  • Spices, nutmeg, ground | 0.50 tsp
  • Margarine, regular, 80% fat, stick, without salt | 0.50 cup
  • Brown sugar | 1.00 cup packed
  • Egg, white, raw | 5.00 large
  • Unsweetened apple sauce with added ascorbic acid | 0.66 cup
  • Buttermilk, low fat | 1.00 cup
  • Wild rice, cooked | 2.00 cup

Instructions

  1. Preheat oven to 350*F.
  2. Grease a 13x9-inch pan with nonstick cooking spray; lightly flour. Combine flour, baking soda, cinnamon, salt and nutmeg in medium bowl, set aside.
  3. Beat margarine with electric mixer on medium speed for 30 seconds in large mixing bowl.
  4. Add brown sugar and vanilla; beat until fluffy.
  5. Add egg whites; beat well. Add applesauce, blending well.
  6. Add dry ingredients and buttermilk alternately to mixture, blending well. Stir in wild rice.
  7. Pour into prepared pan. Bake 45 to 50 minutes or until wooden pick inserted in center comes out clean. Do not over bake.
  8. Cool over a wire rack. Sprinkle with powdered sugar, if desired and serve!
