Ingredients

  • Carrots, raw | 1.00 lb medium
  • Leeks, raw | 1.00 cup
  • Oil, sunflower, linoleic less than 60% | 2.00 tbsp
  • Orange(s) | 2.00 fruit 2-5/8" dia
  • Brown sugar | 1.00 tbsp packed
  • Soy sauce made from soy and wheat shoyu | 2.00 tbsp
  • Peanuts raw | 0.50 cup

Instructions

  1. Grate carrot finely, peel oranges and separate its segments.
  2. Combine sugar, ketchup and soy sauce to form a mixture in a bowl. Then keep aside.
  3. Heat oil in a large saucepan. Add carrot and leeks. Saute for 3 minutes then add oranges and cook gently.
  4. Pour sauce mixture into the saucepan and cook for 2 minutes more while stirring continuously.
  5. Dish out in a serving bowl, sprinkle the peanuts and serve!
