- Grate carrot finely, peel oranges and separate its segments.
- Combine sugar, ketchup and soy sauce to form a mixture in a bowl. Then keep aside.
- Heat oil in a large saucepan. Add carrot and leeks. Saute for 3 minutes then add oranges and cook gently.
- Pour sauce mixture into the saucepan and cook for 2 minutes more while stirring continuously.
- Dish out in a serving bowl, sprinkle the peanuts and serve!
