  • Carrots, raw | 0.50 cup strips or slices
  • unsweetened canned apple juice | 1.50 cup
  • Fresh thyme | 1.00 tsp
  • Lemon peel, raw | 0.25 tsp

  1. Cook carrot in small amount of boiling water in covered small sauce pan about 15 minutes or until very tender; drain well. Cool slightly.
  2. In a blender combine carrot, thyme, lemon peel and apple juice, add ice cubes also. Cover and blend until nearly smooth.
  3. Garnish each serving with lemon half-slices.
