  • Spring onions | 0.33 cup, chopped
  • Onions raw | 0.33 cup, chopped
  • Tomatoes, red, raw | 0.33 cup, chopped or sliced
  • Black eye peas, canned | 2.00 cup
  • Corn sweet yellow raw | 0.33 cup
  • Peppers, jalapeno, raw | 3.00 tsp
  • Red wine vinegar | 3.00 tbsp
  • Olive oil | 2.00 tsp
  • Sweet Green peppers, raw | 0.25 cup, chopped

Instructions

  1. Drain and rinse the beans. Put together the beans, sweet pepper, tomatoes, onions, scallions, corn, jalapeno peppers, red wine and olive oil in a bowl. Cover and set aside for 3 hours to develop the flavor, stirring occasionally.
