Ingredients

  • Butter without salt | 1.00 tbsp
  • Onions raw | 1.00 cup, chopped
  • Wheat flour, white, all-purpose, unenriched | 2.50 tbsp
  • Cheddar cheese | 0.50 cup, shredded
  • green onions tops | 2.00 tbsp
  • Chicken broth, low sodium, canned | 0.75 cup
  • Red potatoes, raw | 3.00 potato medium 2-1/4" to 3-1/4" dia
  • Spices, chili powder | 0.13 tsp

Instructions

  1. Melt butter in a medium saucepan over medium-high heat. Add onion to pan; saute 5 minutes or until onion is tender.
  2. Sprinkle with flour; cook 1 minute, stirring onion mixture constantly.
  3. Peel, and cut potatoes in cubes, then add in the potatoes, milk, broth, and 1/2 cup water to pan; bring to a boil. Cover, reduce heat, and simmer 10 minutes.
  4. Add 1/2 cup cheddar cheese and chilli powder; cook 2 minutes or until cheese melts, stirring frequently. Top each serving evenly with 1 1/2 teaspoons chopped green onions.
