Ingredients

  • Canned cherries , drained, sweet | 1.00 cup
  • Shortening, vegetable, household | 1.00 cup
  • Granulated sugar | 0.50 cup
  • Brown sugar | 1.50 cup packed
  • Egg, whole, raw | 2.00 medium
  • Orange peel, raw | 1.50 tbsp
  • Self-rising enriched wheat flour | 1.75 cup
  • Baking soda | 0.75 tsp
  • Spices, cinnamon, ground | 0.75 tsp
  • Whole wheat, rolled oats, presweetened, with pecans, cereal | 3.00 cup 1 NLEA serving
  • Drinking tap water | 0.25 cup 8 fl oz

Instructions

  1. Preheat oven to 350 F. Cream the shortening with granulated, brown sugar until light and fluffy.
  2. Beat in the egg, vanilla and orange peel until combined well.
  3. Sift together the flour, baking soda, and cinnamon. Mix into the bowl of sugar and combine well.
  4. Combine the rolled oats with 1/4 cup of hot water. Stir the cherries and oats into batter.
  5. Drop by rounded tablespoonfuls onto lightly greased baking sheets.
  6. Bake for 12-15 minutes or until edges are golden. Bring out and allow to cool on a wire rack!
