Ingredients

  • Cherries, sweet, raw | 1.50 cup, with pits, yields
  • Unsweetened canned apple juice with added ascorbic acid | 0.50 cup
  • Spices, cinnamon, ground | 0.25 tsp
  • Spices, nutmeg, ground | 0.13 tsp
  • Cornstarch | 1.00 tsp
  • Drinking tap water | 1.00 tbsp
  • Wheat and malt barley flakes, cereal | 0.33 cup 1 NLEA serving
  • Blanched almonds | 2.00 tbsp
  • Lemon flavor low fat yogurt | 2.00 cup

Instructions

  1. Remove stems and pits from cherries; cut into halves (about 2 1/4 cups).
  2. Combine cherries, apple juice, cinnamon and nutmeg in small saucepan. Cook and stir over medium heat 5 minutes or until cherries.
  3. Combine cornstarch and water in small cup until smooth; stir into saucepan. Cook and stir over high heat until mixture boils and thickens slightly. Let cool 10 minutes; refrigerate, covered, until chilled.
  4. Combine cereal and almonds in small cup. Layer half of cherry mixture, half of yogurt and half of cereal mixture in 4 (10 ounce) wine or parfait glasses; repeat layers.
