Ingredients

  • Skinless chicken breast, raw | 2.00 unit yield from 1 lb chicken
  • Onions raw | 1.00 medium 2-1/2" dia
  • Peppers, jalapeno, raw | 2.00 pepper
  • Garlic, raw | 3.00 Tbsp
  • chicken broth canned, reduced sodium | 2.00 cup
  • Tomatoes, red, raw | 1.75 cup, chopped or sliced
  • Frozen podded peas | 0.50 cup
  • Carrots, raw | 0.50 cup chopped
  • Spices, cumin seed | 1.00 tsp, whole
  • Spices, chili powder | 1.00 tsp
  • Brown rice, medium grain, raw | 0.75 cup

Instructions

  1. In a nonstick skillet, sauté chicken strips over medium heat until cooked thoroughly, about 10 minutes.
  2. Set aside and keep warm.
  3. In a large skillet, add the rice and vegetables, bring to boil.
  4. Cover and simmer about 30 minutes, until rice has absorbed liquid.
  5. Remove cover from rice mixture, remove from heat, and let stand for 3 to 5 minutes.
  6. Arrange chicken over rice and serve.
