Ingredients

  • White mushrooms raw | 2.00 cup, whole
  • Tomatoes, red, raw | 1.75 cup, chopped or sliced
  • Onions raw | 0.50 cup, chopped
  • Chicken broth, low sodium, canned | 2.00 cup
  • Capers, canned | 4.00 tbsp, drained
  • Spices, curry powder | 3.00 tsp
  • Spices, thyme, dried | 1.00 tsp, ground
  • Salt | 0.25 tsp
  • Spices, pepper, black | 0.25 tsp, ground
  • Artichokes, globe or french, frozen, unprepared | 1.00 package 9 oz
  • Cornstarch | 1.50 oz
  • Drinking tap water | 1.50 fl oz
  • Chicken meat without skin, raw | 1.00 unit yield from 1 lb chicken

Instructions

  1. In a 4 to 5-quart slow cooker combine mushrooms,tomatoes, chicken broth, onion, capers curry powder, thyme, salt, and pepper.
  2. Add artichoke hearts.
  3. Place chicken on top.
  4. Cover and cook on low-heat setting for 4 hours or on high-heat setting for 2 hours.
  5. Using a slotted spoon, transfer chicken and artichokes to a serving bowl.
  6. Cover chicken and artichokes with foil to keep warm.
  7. If using low-heat setting, turn to high heat setting. In a small bowl combine cornstarch and water.
  8. Add in the curry mixture, when thicken, pour over chicken and artichokes.
  9. Serve warm.
