Ingredients

  • Palm kernel oil | 3.00 tablespoon
  • Onions raw | 1.00 medium 2-1/2" dia
  • Celery, raw | 1.00 strip 4" long
  • Peppers, sweet, red, raw | 0.50 cup, chopped
  • White rice long grain enriched, raw | 2.00 cup
  • Home prepared, chicken stock | 4.00 cup
  • Tomato puree, canned without salt | 1.00 tbsp
  • Tabasco | 1.00 tsp
  • Chicken meat without skin, roasted | 1.00 cup, chopped or diced
  • Chorizo, pork and beef | 4.00 oz
  • Frozen green peas | 3.00 oz

Instructions

  1. Firstly chop an onion and celery strip, slice the chorizo and set them aside until required.
  2. Take a heavy based saucepan and heat up oil into it, add chopped onion, pepper and celery. Leave to cook until soften but not browned.
  3. Now add rice, chicken stock, tomato puree and Tabasco sauce. Let simmer for at least 10 minutes.
  4. Add chicken meat, sausage and peas, simmer for more 5 minutes. Place out from the heat and switch it off, cover it and leave to rest for just 5 minutes then serve delicious Chicken and Chorizo to all.
