Ingredients

  • Chickpeas garbanzo beans, canned | 2.50 cup
  • Garlic, raw | 1.00 Tbsp
  • Carrots, raw | 1.00 medium
  • Spices, cumin seed | 1.50 tsp powdered
  • Spices, coriander | 1.50 tsp
  • Salt | 1.00 dash
  • Spices, pepper, black | 1.00 dash
  • Egg, whole, raw | 1.00 medium
  • Wheat flour, white, all-purpose, unenriched | 2.00 tbsp
  • Olive oil | 0.25 cup
  • Commercially prepared whole wheat bread | 2.00 slice
  • Tomatoes, orange, raw | 1.00 tomato
  • Onions raw | 1.00 medium 2-1/2" dia

Instructions

  1. Peel the carrots, grate them coarsely and set them aside.Peel and roughly chop the garlic.
  2. Drain and rinse the chickpeas and put them into a food processor with the garlic, ground spices, salt and pepper. Slightly process to obtain a rough paste then add the carrot, egg, and flour and process briefly until evenly mixed but slightly rugged.
  3. Heat the oil in a frying pan and divide the mixture into 8. Fry in batches for 2–3 minutes on each side, until golden, then drain on kitchen paper.
  4. Keep opened chickpea can to cut round shapes in bread slices. Toast each slice in toaster or in frying pan.
  5. Serve with slices of tomato and onions and mayonnaise.
