Ingredients

  • Onions raw | 2.00 medium 2-1/2" dia
  • Garlic, raw | 3.00 Tbsp
  • Olive oil | 1.00 tablespoon
  • Chickpeas garbanzo beans, boiled, without salt | 3.00 cup
  • Spices, paprika | 1.00 tsp
  • Spices, oregano, dried | 1.00 tsp, ground
  • Frozen spinach | 1.00 package 10 oz
  • Lemon juice, raw | 2.00 lemon yields
  • Tomatoes, orange, raw | 1.50 cup, chopped

Instructions

  1. Chop the onion.Mince the garlic.
  2. In a large saucepan, over medium heat, saute the onions and garlic in the olive oil until the onions are tender.Add the chickpeas, tomatoes oregano,and paprika.
  3. Cover and simmer for about 18 minutes, stirring occasionally. Add spinach and cook about 7 minutes longer, or until spinach is cooked.
  4. Add the lemon juice, salt and pepper.
  5. Serve.
