Ingredients

  • Cucumber, peeled, raw | 1.00 medium
  • Home prepared, fish stock | 1.67 cup
  • canned tomato juice | 0.67 cup
  • Yogurt, plain, whole milk | 0.67 cup 8 fl oz
  • Canned shrimp | 0.50 cup
  • Tabasco | 1.00 tsp
  • Fresh peppermint | 1.00 tbsp
  • Salt | 1.00 dash
  • Spices, pepper, white | 1.00 tsp, ground

Instructions

  1. Dice the cucumber then process in a food processor until smooth. Chop the shrimps and peppermint roughly.
  2. Now push the pureed cucumber through a sieve into a large bowl, add fish stock, tomato juice, yogurt and shrimps.
  3. Add tabasco sauce, season to taste and mix well.
  4. Pour into glass bowls and add some ice to keep it chilled. Top with peppermint, cucumber slices and whole prawns.
