- Dice the cucumber then process in a food processor until smooth. Chop the shrimps and peppermint roughly.
- Now push the pureed cucumber through a sieve into a large bowl, add fish stock, tomato juice, yogurt and shrimps.
- Add tabasco sauce, season to taste and mix well.
- Pour into glass bowls and add some ice to keep it chilled. Top with peppermint, cucumber slices and whole prawns.
